I don't think these should be considered "jam bands".
These are examples from a few different genres.

well, how would you categorize cracker and camper van beethoven? they have tons of great shows on here.
as do cowboy junkies (who can be hit or miss live - sometimes too damn slow and morose and other times just right). I've always liked the mekons, and they have some really good older stuff here (although recording quality often suffers). more and more of the new orleans style funk stuff is showing up here as well - dumpstaphunk and I think, out of the UK, the new mastersounds are posted here. Just gotta poke around

Let me add:
Kevn Kinney (though he can jam)
Souther Culture on the Skids
Mermen (great band which I always seem to miss when in the area)

Fugazi, Animal Collective, death Cab For Cutie, Smashing Pumpkins, Zwan, The Decemberists, Pelican, Explosions In The Sky, Blitzen Trapper, Jump Little Children just to name a few non-jam bands on archive.

Just go to the live music archive page and look through it. There is some weird stuff that you would never expect.
